Pasta with Bell Peppers
Easy and tasty!

6  bell peppers, different colours

1/2 cup vegetable oil

1/2 tsp pepper flakes

salt and pepper to taste

1 lb pene pasta

 

Roast peppers in oven until skins brown. Place roasted peppers in covered bowl and let stand until cool. Remove skins from peppers and cut into 1" strips.

In saucepan combine prepared peppers, oil, pepper flakes, and salt and pepper. Simmer on medium heat for approximately 20 mins.

In separate saucepan cook pasta according to package directions.

Combine cooked peppers with pasta and serve!

 

 
Golden Cheddar Loaf

One of the easiest and tastiest of home made breads!

3 1/2 cups all purpose flour
1 Tbsp quick rise yeast
1 1/2 cups old cheddar cheese or sharp cheese
2 Tbsp sugar
1 tsp salt
1 cup water
1/3 cup milk
1 egg white
 
Mix 2 1/2 cups flour, yeast, cheese, sugar and salt in large bowl.
Heat water and milk until very warm.
Stir into dry ingredients.
Mix in enough remaining flour to make soft dough that does not stick to bowl.
Knead on lightly floured surface until smooth and elastic about 8 minutes.
Cover and rest 10 minutes.
Divide into 3 equal pieces.
Roll each piece into a 14" rope.
Braid ropes pinching ends to seal.
Place into lightly greased loaf pan.
Cover with towel and let rise until double in size, approximately 40 minutes.
Brush loaf with egg white lightly beaten with 1 tablespoon of water.
Bake 375 degrees approximately 30 minutes or until golden brown.
Remove to wire rack.
 

 

 

 
Apple Dumplings
 

This is great served warm, on cold winter days!

2 cups water
1 1/2 cups sugar
1/4 tsp cinnamon
1/4 tsp nutmeg
1/4 butter or margarine
2 cups all purpose flour
2 tsp baking powder
1 tsp salt
3/4 cup shortening
1/2 cup milk
6 small whole apples pared and cored
 
For syrup mix first 5 ingredients; cook 5 minutes, remove from heat: add butter.
 
Sift together dry ingredients cut in shortening till mixture resembles coarse crumbs. Add milk all at once: stir just till flour is moistened. On lightly floured surface, roll to 18x12 inch rectangle.
cut into six inch squares. Place apple on each. Sprinkle apples generously with additional sugar, nutmeg and cinnamon, dot with butter. Moisten edges of pastry. Bring corners to center and pinch edges together. Place 1 inch apart in ungreased 13x9x2 inch baking dish. Pour syrup over dumplings. Bake at 375 degrees for 35-40 minutes.
Serve warm with ice cream or table cream if desired. Also delicious cool without cream.

 

 

 
Poor Man's Shrimp

With the holiday season in full swing this is a perfect time to enjoy your summers catch. Poor Man's Shrimp is an excellent way to do this. Impress your family and friends by serving this as an appetizer.

The following ingredients are estimates only and will depend on the size and quantity of fish.
 
2 cups of canola oil
1 slightly beaten egg
3/4 cup Italian breadcrumbs
flour for dredging fish
1 walleye cut into small fingers
cocktail sauce
 
Directions
 
Dredge fish in flour. Dip into egg then breadcrumbs. Brown in heated canola approximately 1 minute per side or until golden brown. Remove from pan, drain on rack. Serve with your favourite cocktail sauce.
